Summer in Estancia

 

This bright, acidic cocktail is the perfect end to an afternoon polo match or nightcap on a summer evening. The sweet, refreshing flavors of the Summer in Estancia are elevated by Royal Salute Polo Estancia Edition’s complex fruity notes. Serve this cocktail over one large ice cube so you can sip, savor, and enjoy the summer sunset.

Ingredients

For the Summer in Estancia:

  • 45 ml / 1.5 oz Royal Salute Polo Estancia Edition
  • 15 ml / 0.5 oz Asti
  • 10 ml / 2 teaspoons raspberry shrub
  • 5 ml / 1 teaspoon bitter aperitivo
  • 2 dashes chocolate bitters
  • Dried raspberry (for garnish)

 

For the Raspberry Shrub:

  • 60 g / ½ cup fresh raspberries
  • 120 ml / ½ cup apple cider vinegar
  • 150 g / ¾ cup granulated sugar

Method

  1. Make the raspberry shrub: In a jar, combine raspberries and apple cider vinegar. Let sit for 24 hours.
  2. Shake the jar well to dissolve the berries. Strain out any remaining solids using a coffee filter.
  3. Add vinegar and raspberry mixture to a small saucepan along with granulated sugar. Stir to combine over medium heat until the sugar dissolves. Allow to cool.
  4. Make the cocktail: To a shaker filled with ice, add Royal Salute, Asti, raspberry shrub, bitter aperitivo, and bitters.
  5. Shake and strain into a tumbler over one large ice cube. Garnish with a dried raspberry.
